    1. Baked Lemon Chicken

Say goodbye to dull, dry chicken breasts and say hello to Baked Lemon Chicken. Melt butter in a skillet over medium heat and add chicken. Cook until browned (about 2 to 3 minutes per side). Place the browned chicken on a baking sheet and whisk chicken broth together with lemon juice, honey, garlic and Italian seasoning. Pour this mixture over the chicken and bake for 20 to 30 minutes.

    2. Super Simple Jerk Chicken

Keep things simple, spicy and delicious with this Super Simple Jerk Chicken recipe. Prepare the rub by combining spices in a bowl with canola oil and brown sugar. Transfer spice-rubbed chicken breasts to a hot skillet or grill and cook for about 4 to 6 minutes per side. Let the cooked chicken sit for few minutes to let the juices soak in before serving.

    3. Sweet and Spicy Baked Chicken

You and your family will love this Sweet and Spicy Baked Chicken recipe. The sweet and spicy glaze is made by whisking together water, brown sugar, and apple cider vinegar with your favourite hot sauce, minced garlic and a little salt. While the sauce is boiling, brown the chicken in a skillet then place it on a greased baking sheet and brush on the flavourful sauce. Bake for 20 to 25 minutes and pour the rest of the sauce on the hot chicken.

    4. Grilled Honey Mustard Chicken Skewers

These Grilled Honey Mustard Chicken Skewers are made with a simple 3-ingredient marinade of honey, mustard and minced garlic - plus a little salt and pepper. Marinate the chicken in the fridge for at least 2 hours, or even overnight. Soak the wooden skewers beforehand to prevent splintering or burning.

    5. Sticky Garlic Chicken Bites
Try these Sticky Garlic Chicken Bites for bite-sized bits of panko-breaded bliss!  Prepare the chicken by dipping it first into a bowl of 2 beaten eggs and then pressing them into the panko crumbs. Bake on a greased pan until crisp (about 20 minutes). Prepare the sauce by heating honey, garlic, soy sauce, ginger and Sriracha in a saucepan over medium heat, until it thickens. Gently toss cooked chicken in the sauce.

  • 5 Easy Summer Meals We Love

    Jul 31, 2017

Summer is a special time of year. It's the perfect time to relax with friends and family, enjoy the weather, and eat some delicious food. Since no one likes to work too hard in the summer heat, Timbercreek Communities presents 5 easy summer meals we love!

    iStock-617780768

    1. BBQ Chicken And Potato Salad

Grilling good BBQ Chicken is all about the sauce. Don’t just squeeze it from a bottle. You can start with bottled ketchup, Worcestershire, mustard, chili and hot pepper sauce -- but then add your own twist with sauteed garlic, butter, brown sugar, celery seed and salt. Nothing goes better with great BBQ chicken than a classic Potato Salad on the side.

    2. Grilled Chicken Caesar Salad

Sitting in the sunshine with a freshly prepared Grilled Chicken Caesar Salad is what summer is all about. It can be ready to serve in half an hour, with only 15 minutes of hands on time. Whip up the dressing by chopping garlic cloves and pureeing it with a cup of olive oil. Then it’s all about the anchovies! Add a little lemon juice, salt and pepper and blend until smooth.

    3. Pho

Making traditional Pho normally takes several hours, but this quick and easy version can be ready to serve in only 40 minutes! Combine beef stock and water with ginger, onion, garlic, star anise, cinnamon, sugar and fish sauce and simmer for 20 minutes. Prepare the noodles according to package directions. Place the noodles and sliced beef fillet in a warmed bowl and pour the hot soup over top to cook the beef.

    4. Portobello Burgers

You won't miss the meat once you bite into these Portobello Burgers! You can cook them in a pan indoors, or outside on the grill. Basting the burgers with a good marinade is crucial. Fortunately you can create a simple and tasty marinade with balsamic vinegar, soy sauce and Montreal steak seasoning.

    5. Sushi Handrolls

Sushi Handrolls are a satisfying summer meal that won’t leave you feeling overly full. They are great to serve at a summer get-together as you can prepare them in advance or simply lay out the ingredients and let your guests build their own! If you’ve never made them before, this recipe will show you how, step-by-step, with pictures! Remember to moisten the edge of the nori with water to seal the cone. Serve with shoyu (Japanese soy sauce) and a little pickled ginger.

Timbercreek hopes that these easy summer meals help you say bon appetit in the summer heat! To find your home with Timbercreek Communities, please visit our website.

  • Fun & Cheap Summer Date Ideas

    Jul 10, 2017

Whether you’re meeting someone new or celebrating an anniversary, great date ideas are always useful. Dating can be expensive but it doesn’t have to be. Timbercreek has some fun and cheap summer date ideas for you to enjoy with someone you love or someone new.

    iStock-596081514A Walk In The Park

A stroll in the park is possibly the easiest and cheapest of all date ideas.  If the weather is working in your favour it can be a beautiful way to spend the day. Best of all, if you’re nervous you don’t have to look at each other constantly. Up the romance factor by bringing a blanket, some cups and something to drink. Sunset is a great time for your stroll.

    Wine Tasting Event

In Ontario, the LCBO offers an affordable range of wine tasting events that range from $30 to $100. They also have beer and scotch tastings, as well as longer term 4 week courses. A wine or beer tasting is social, public, and gives you something to talk about with your date. The events are often held in the nice LCBO buildings (like Toronto’s Summerhill location).

    Brunch

Meeting at night for the first time is often ill advised. A classic brunch out is a cheap and delicious date option not to be overlooked. Brunch is really popular in Canada so you’ll have no shortage of restaurant options to choose from. Check out the best places in Toronto for brunch here

    Happy Hour Drink(S)

It’s hard to beat happy hour -- another inexpensive daytime date option to consider. Most pubs offer it and more and more craft beer bars are adding it to their rosters. Grab a seat and enjoy a $5 beer or a half price glass of wine with your date. Worst case scenario, you get a cheap drink out of it.

    Street Festival

In summer, festivals and street events are great options for cheap dates. Many of these events in big cities are free and allow you to walk through a number of big city blocks that are closed to traffic. These fun events usually come with a ton of cheap or free food, beverages, and entertainment. There’s always lots to do and you won’t be locked into a full restaurant meal or long event.

    Jazz Show

Live jazz, while not for everyone, is sophisticated, interesting, and fun to listen to and watch. Because it’s improvised you’ll get to hear something unique with every show. Going to a concert is a great date idea and takes the pressure off of making witty conversation. If the music is bad it also gives you something to commiserate over. Normally less than $20, a jazz show is a great way to spend a date.

    Coffee

Who doesn’t like coffee? A coffee date is almost guaranteed to be cheap --  even at Starbucks where it’s only $4 for a latte. Best of all it gives you the option to sit and talk, or walk and talk. Coffee dates can be short and sweet, or be a starting point for a longer date. The best thing about them is their flexibility and low cost.

Timbercreek hopes this list of cheap date ideas has inspired you to get out there. For more information about Timbercreek Communities in your city, please visit our website

  • 10 Favourite Holiday Dinners

    Dec 15, 2016

It may be hard to believe, but the holiday season is almost here. The holidays are all about getting together with friends and family, and enjoying good food. Hosting a holiday get together this season? You’ve got to try Timbercreek’s 10 favourite holiday dinners.

    iStock-589962378Turkey with all the trimmings

Turkey with all the trimmings is the iconic holiday meal in North America. If you’ve never tried to tackle it, it’s important to have a plan. Figure out what can be made ahead of time so you can prioritize and even ask for help from your guests. People like to be helpful, especially at this time of year. Encourage your guests to bring a vegetable side dish or a dessert to reheat. Taking a few minor obligations off your plate can make hosting the holiday dinner more enjoyable.

    Glazed ham and Couscous

Not everyone likes turkey. For guests who aren’t fans of fowl, we suggest serving this equally impressive Brown Sugar Mustard Glazed Ham with Couscous. This meal is a breeze to prepare compared to turkey and all the trimmings. It can be ready to serve in two to three hours.

    Brisket and Latkes

Our favourite holiday dinner for Hanukkah is Braised Brisket and Latkes. It’s a deeply satisfying meal of meat and potatoes, done holiday style. Crispy, oniony, latkes pair perfectly with rich and savoury brisket. Brisket can be a tough cut of meat to master. If you’ve never prepared a brisket before, check out these tips on how to do it perfectly.

Christmas Roast Beef with Yorkshire Puddings

We love the classic British Christmas Dinner of Roast Beef with Yorkshire Puddings. You don’t have to hail from the UK to love enjoy tender and delicious roast beef with savoury pastries. Best of all, you get to drench everything in a rich brown gravy!

Italian Feast of the Seven Fishes

Pescatarians will love this Christmas tradition. On Christmas Eve (December 24th) Italian families serve fish instead of meat. There are no rules for preparing The Feast of the Seven Fishes, but the classic meal typically consists of a snack-sized seafood appetizer course, a seafood salad course, a meaty grilled seafood course, followed by a seafood pasta, a stew and vegetable course, and finally a fish-free dessert.

    Beef Bourguignon with Parsley Potatoes

We love the rich textures and intense savoury flavours of Beef Bourguignon with Parsley Potatoes. Beef Bourguignon is a hearty classic French dish that involves a lot of umami loaded ingredients (wine, mushrooms and cognac, bacon etc.). This meal is elegant but substantial and can be ready to serve in less than two hours with about 45 minutes of hands on prep time.

Rack of Lamb with Roast Potatoes

Rack of Lamb with Roast Potatoes is a classic holiday meal that looks dramatic and tastes delicious. Don’t be intimidated by this one -- it only takes a few minutes to prepare (not including marinating time). The trick is to be restrained with the herbs. The flavour of the lamb is strong on it’s own so the seasonings should complement this flavour without overpowering it.

Roast Chicken with Wild Rice Stuffing

Roast Chicken with Wild Rice Stuffing has been a popular Christmas dinner since the 1990s. It offers a light and elegant alternative to turkey with bread stuffing. This recipe takes about three and a half hours total to prepare, but only about 45 minutes of that is hands-on prep time, so it's a perfect meal option if you have a lot on your plate.

    Aloo Gobi (Potato and Cauliflower)

Spice things up this season with Aloo Gobi! This hearty spiced potato and cauliflower dish is popular across India and Pakistan and will impress your vegetarian guests.

    Beef Wellington with Roasted Veggies

If you really want to wow the crowd this holiday season, serve Beef Wellington with Roasted Veggies. This classic show stopping meal is perfect for a special occasion like Christmas. If you’ve never tasted Beef Wellington, it is an incredible mix of textures. Prime cut filet mignon is wrapped in buttery puff pastry and baked -- the decadent result is unforgettable.

Happy Holidays from Timbercreek Communities. We hope you enjoyedi our 10 favourite holiday dinners! For information on Timbercreek Rental Communities across Canada, please visit our website.
