    There are many ways to celebrate Easter, but pretty much all of them involve food. And while the glorious and traditional Easter meal tends to oscillate between lamb and ham, what makes it different and delicious is a bountiful variety of sides.     Roasted Heritage Carrots

    Heritage carrots are beautiful, have you tried them? They come in amazing colours like purple and red. Pick some up from an organic store or produce market, wash and peel (not even necessary) them, trim their stalks to be even length, and toss in olive oil, salt, and pepper. Bake until tender but still firm, then drizzle with balsamic glaze, and garnish with parsley or basil. See more.

    Peas with Bacon and Shallots

    Pass the peas, please! We love peas -- they are an iconic symbol of spring. Take them to a whole new level with this Peas with Bacon and Shallots recipe. Cook ½-1 pack of bacon until crisp, remove, and keep 2 tbsp of bacon fat in the pan. Toss in chopped garlic and thinly sliced shallots, cook until soft, add ¼-½ cup cream, lemon zest/juice, salt and pepper, and bring all to a simmer. Throw in frozen peas, cook through, crumble bacon on top, mix, and serve immediately.  See more.

    Snap Pea and Radish Salad

    Radishes and snap peas scream spring. They're totally in season, crisp and fresh tasting. Combine them with a killer creamy avocado dressing in this winning side dish recipe. In a bowl, combine 1lb sugar snap peas and about 12 quartered radishes and set aside. In a blender, combine avocado, vinegar, lemon juice, mustard, salt, pepper, and fresh cilantro. Blend and gradually add olive oil (and water as necessary), blending until the mixture is a smooth purée. Toss salad with dressing to coat and serve immediately. Check it out.

  • Asparagus Recipes We Love

    Asparagus can look a little intimidating if you don't know what to do with it, but it's actually a totally non-threatening and delicious spring vegetable that you should stock up on. It’s a surprisingly versatile ingredient that lends itself well to many dishes.  It’s best bought when in season, from February to June. Timbercreek has some tasty ideas for how to use this crisp veg.

    Orzo Pasta with Grilled Asparagus

    Try two new-to-you ingredients in one recipe! Have you ever tried orzo? It's a delicious rice shaped pasta that pairs brilliantly with asparagus. Boil your pasta until al dente, drain, and leave on low heat. Add olive oil and one chopped onion, cook for 2 minutes, add 2-3 cloves of garlic and continue to cook for 2 minutes stirring occasionally. Drop in halved snap peas and asparagus cut into 1” pieces, and cook until soft but crisp. Remove from heat, add lemon juice, zest, mint, and ¼ cup of feta cheese. Stir well, season with salt and pepper, and top with another ¼ cup cheese. Get the full recipe here.

    Asparagus Salad with Sherry Vinaigrette and Poached Egg

    This delicious salad is perfect for lunch or a light dinner. Best of all it can be made super quickly! Whisk together 1 tbsp grainy mustard, 1 tbsp sherry vinegar, 4 tbsp grapeseed oil, salt and pepper until smooth.  Blanch asparagus in boiling water, then toss in salt, curry powder, and olive oil, and grill (or pan sear) until lightly charred. Next it's time to perfectly poach an egg -- boil water, stir vigorously, and crack in the egg. Cook for 3 minutes, remove, and place carefully in a bowl of ice water. Remove, and trim off any white edges. Plate 6 or more asparagus spears, drizzle with vinaigrette, top with the poached egg, and fresh parmesan reggiano cheese. Get the recipe here.

    Asparagus and Panko Crusted Salmon

    Asparagus and salmon are an elegant and classic pairing. If you want to impress a date, make this Asparagus and Panko Crusted Salmon recipe! Blanch asparagus then place in a blender with garlic, dill, salt and pepper, a touch of cream, and puree. Lightly season salmon filets with salt and pepper, then coat top and bottom with asparagus puree. Dab the filet in panko breadcrumbs until coated (top and bottom). Sear in olive oil over medium-high heat for 3-4 minutes, until edges are white and the middle is slightly pink. Plate over a smear of puree with potato or salad side. Get the recipe.

    Oven roasted Asparagus with Cheese Sauce

    This one’s an easy and healthy game-day classic. Trim asparagus stalks and toss in olive oil, sea salt, pepper, and a touch of garlic powder. Heat oven to 350F, place asparagus on a baking tray, and cook until lightly browned. Meanwhile, make a cheese sauce by whisking cream or milk and shredded cheese together in a small pot over medium heat until soft. Plate asparagus, drizzle with the cheese sauce, and sprinkle a pinch of chili spice or cayenne over top.

    Asparagus and Prosciutto

    Looking for a great spring appetizer? Asparagus wrapped in prosciutto with apple slices and boursin is a killer offering. Blanch asparagus for 1-2 minutes.While blanching, slice aged cheddar and green apples as thinly as possible (i.e. use a mandoline). Once cooked, remove the asparagus, dry and cut into 2” pieces. Lay out prosciutto slices on a cutting board, spread a layer of boursin, and lay apple slices on top. Add asparagus pieces near one end, and roll until covered. Place onto a baking tray, and roast at 375 F until cheese is melted and/or the prosciutto is starting to crisp up. Get the recipe here.

    Clean Up Your Entryway

    While not specifically a home cleaning event, everyone has a pile of digital waste. Files, emails, notes, reminders, calendars, images, documents, old receipts -- it’s endless. With no real pressure to backup aside from losing all your data, it’s a clutter-creating epidemic. Take a couple hours to delete and back stuff up.

    Clean Out Your Freezer

    Cleaning out your freezer can seem like a thankless task. While annoying to do, cleaning out and even defrosting your freezer has multiple benefits. Unused frozen food takes up tons of space. Freezer burn is real and tastes bad. Freezer frost builds up over time and can cause odors and fridge leaking, not to mention reducing freezer space. The best way to clean out this often neglected part of the fridge is to take everything out, discarding anything you won’t use, unplug, toss in a pot of boiled water, steam, defrost, wipe or scrub, and voila.

    Pumpkin Cinnamon Rolls

If you want to make that fantasy a reality, prepare a couple of loaf pans and preheat the oven to 350°F. Combine sugar and oil in a big bowl and blend. Add in egg and pumpkin. In a separate bowl sift flour, baking powder, baking soda and spices (cloves, cinnamon, nutmeg). Combine the two mixtures, add in walnuts for an even more substantial snack, and pour the mixture into loaf pans to bake.

    Pumpkin Pie 

    It’s tough to beat a perfectly prepared piece of Pumpkin Pie in the fall. Prepare your pie by combining pumpkin, sweetened condensed milk, eggs, sugar, salt and spices (cinnamon, clove, ginger, nutmeg) in a bowl and beat until smooth. Pour the mixture into a prepared pie crust and bake at 425°F for 15 minutes, reduce the heat to 350°F for another 50 minutes. Allow it to cool before you dig in!

    Pumpkin Chocolate Chip Cookies

    Chocolate chip cookies are a classic dessert any time of the year. Put a fall twist on the traditional treat with this Pumpkin Chocolate Chip Cookies recipe. They’re easy to make and require less than 15 minutes to bake!

  • Make Your Own: DIY Frappuccinos

    Who doesn’t love a Starbucks frappuccino? They’re totally addictive! They’re also totally expensive and a frappuccino habit can add up quickly. Save your wallet and make them at home! With some coffee and a bit of DIY ingenuity, Timbercreek will show you how to whip up your own frappucinos with ease.

    Caramel Frappuccino

    With a blender, ice cubes, coffee, milk, and some caramel sauce, you can whip up a pretty convincing caramel frappucino. Toss a cup of ice cubes, 2 shots of espresso, a half cup of milk, a tablespoon of caramel sauce and 3 tbsp of caramel syrup into a blender and pulse for 30 seconds or to taste. Once done, serve, and garnish with whipped cream and drizzle with more caramel sauce. A great addition that will help thicken the drink is xanthan gum. Never heard of it? It’s a mix of fermented glucose and sucrose that is used widely as a thickening agent. It’s available at most healthfood stores.

    Smores Frappuccino

    To make a frappuccino that will bring back sweet summer camp memories, try this Smores Frappuccino recipe. As with all Frappuccino drinks, brew up a couple shots of espresso, or a strong cup of drip coffee and let cool. Have ice cubes on hand, as well as a 1/2 cup of whipping cream, 1/2 a cup of fluff, and 1/2 to 1 teaspoon sugar graham crackers, and some milk of your choice. Whip the cream until you get soft peaks, add the fluff and continue whipping until you get hard peaks, add sugar, and put in the fridge until ready. Crush graham crackers (1-2 per frappuccino or to taste), then assemble. Use the blender method described above or pour coffee over ice and top with fluff/whipped cream garnish.

    Unicorn Frappuccino

    While difficult to make DIY style, Stabucks’ rarefied and mythical unicorn frappucinos are doable at home. Brew your coffee, let cool, and have ice cubes in the freezer, as well as a cup of milk, ¼ cup heavy cream, and 2 tbsp mango syrup. For the Blue Drizzle Sauce, blend ½ cup white chocolate morsels, 2 tablespoons blue raspberry sour powder topping or crushed up Warhead candies, and 2 tablespoons of milk. Blend all ingredients, drizzle blue sauce down the sides of your frappuccino cup, add blended coffee, and top with whipped cream and sour powder. It’s tough to get this one exact, but there’s lots of room for creativity and it will taste great no matter what.

    Strawberries and Cream Frappuccino

    This one is pretty straightforward. Start with a base of coffee, ice, and milk. To this add ¼ cup of vanilla ice cream, 2 strawberries (per frappuccino), 2 tbsp strawberry syrup, and if desired, ⅛ tsp xanthan gum for thickener. Blend your ingredients, top with whipped cream, and voila, you’ve got a delicious Strawberries and Cream Frappuccino.

    With the basic frappuccino recipe, and your choice of other flavours like mocha, vanilla, green tea, or cinnamon dolce, amazing DIY frappuccinos are possible.     1. Baked Lemon Chicken

      Say goodbye to dull, dry chicken breasts and say hello to Baked Lemon Chicken. Melt butter in a skillet over medium heat and add chicken. Cook until browned (about 2 to 3 minutes per side). Place the browned chicken on a baking sheet and whisk chicken broth together with lemon juice, honey, garlic and Italian seasoning. Pour this mixture over the chicken and bake for 20 to 30 minutes.

    2. Super Simple Jerk Chicken

      Keep things simple, spicy and delicious with this Super Simple Jerk Chicken recipe. Prepare the rub by combining spices in a bowl with canola oil and brown sugar. Transfer spice-rubbed chicken breasts to a hot skillet or grill and cook for about 4 to 6 minutes per side. Let the cooked chicken sit for few minutes to let the juices soak in before serving.

    3. Sweet and Spicy Baked Chicken

      You and your family will love this Sweet and Spicy Baked Chicken recipe. The sweet and spicy glaze is made by whisking together water, brown sugar, and apple cider vinegar with your favourite hot sauce, minced garlic and a little salt. While the sauce is boiling, brown the chicken in a skillet then place it on a greased baking sheet and brush on the flavourful sauce. Bake for 20 to 25 minutes and pour the rest of the sauce on the hot chicken.

    4. Grilled Honey Mustard Chicken Skewers
